Why does the professor say eigenvectors are linearly independent if there are n distinct eigenvalues?

Because the characteristic polynomial of A has degree n, so A has n eigenvalues (counted with multiplicity). If they're all distinct, each has geometric multiplicity 1 — and eigenvectors from distinct eigenspaces are always independent.
